Jon Hizola is a culinary powerhouse known for his expertise in Japanese cuisine, having been one of the key people who brought it into the Gold Coast.
Originally from the Philippines, Jon has showcased his skills at the Winter Olympics in Japan and honed his teppanyaki techniques at Nobu and Sushia, where he headed the kitchens.
He later embraced Malaysian cuisine at Ria in Perth and launched renowned venues like Benihana, Etsu, and Hideaway Kitchen & Bar right here on the Gold Coast.
As Executive Chef at The House of Bamboo, Jon curates and executes an exciting Asian fusion street food menu, emphasizing quality and sustainability.
His culinary skills are helping cement The House of Bamboo as a top dining destination—not just in Coolangatta, but across the entire state—celebrated for its unique and immersive experience.

Alex Dickson started out in cocktail bars & small venues, quickly gaining recognition for his flair bartending and beverage creating skills.
His journey took him across Asia, performing fire shows and earning accolades, including being a top 25 finalist in the 2014 Diageo World Class Cocktail Competition.
Transitioning into event management and catering, Alex orchestrated The Winter Village Parramatta, featuring Australia’s largest outdoor ice-skating rink.
As his career progressed, he held General Manager and Licensee roles at prestigious Sydney venues like Forresters and the Coronation Hotel.
His commitment to excellence, attention to detail, and passion for hospitality are evident in his career journey, leaving a lasting mark on the industry with his creativity and leadership.

Fraser Pollard is a hospitality visionary with over 25 years of experience in beverage and operations management.
Beginning in Newcastle (UK) & Ibiza’s club scenes, as a promoter he found his passion for the industry during his days in London working with the infamous Match Group.
Working his way through London’s elite venues such as ‘The Groucho Club’ and ‘Mahiki Mayfair’, serving Royalty & A-List Celebrities to New Zealand where he was a top ranking finalist in the ‘Bartender of the Year’ competition within the same year that he arrived before moving onto Australia’s vibrant scenes, his career is marked by innovation and a commitment to exceptional guest experiences.
Fraser is committed to innovative hospitality, ready to take Straight Up Hospitality Co. national, demonstrating that dedication to people and quality can elevate the industry.
